Low temperature cooking to avoid color and flavor alterations and preservation in an ancient solution that will make you taste the real gardener of the past In fact in the past the oil was an extremely expensive and valuable product, for this reason the vegetables were kept in solution watery and only once opened are drained and shared with a drizzle of fine extra virgin olive oil!
Today we wanted to create a product as light as possible, but without giving up the taste, thus avoiding exceeding with the oil (typical of the classic in oil), but allowing you to add your quantity of oil only when tasting !

Ingredients: vegetables in varying proportions (carrots, fennel, celery, red and yellow peppers, spring onions, green olives, cauliflower), water, wine vinegar, salt, brown sugar.
